TASTY , EASY AND QUICK MALABAR GHEE RICE/ NEYCHORU
INGREDIENTS FOR TASTY MALABAR GHEE RICE/ NEYCHORU:
1) KAIMA RICE ( I am using Rahath kaima rice) - 3 CUPS
2) GHEE - 5 TBSP
3) SUNFLOWER OIL - 3 TBSP
4) CINNAMON STICK - 3 Nos
5) CLOVES - 3 Nos
6) CARDAMOM - 3 Nos
7) ONION - 1
8) ROSE WATER - 1 TBSP
9) CORIANDER LEAVES - 1 CUP Chopped( optional)
10) WATER - 6 CUPS
11) SALT - As required
HOW TO MAKE TASTY MALABAR GHEE RICE/ NEYCHORU:
STEP 1
Wash rice well and soak it in salt water for 30 minutes. Soaking in salt water removes all dirt as well as the rice beetles if any. PS: Rice which is kept for long time brings better taste for your ghee rice.
STEP 2
Take a thick bottom pan. Add ghee+ oil into the pan. Add cinnamon, cardamom, cloves and other whole spices like star anise etc, as you wish. Let it splutter.
STEP 3
Add chopped onion. Saute it until it turn translucent. Add little salt in this time to saute the onion well.
STEP 4
Now add the soaked rice into the pan. Fry the rice for 5 minutes. PS : Sauteing the rice in ghee will help you to make your ghee rice/neychoru without clogging or over prevent it from over boiling.
STEP 5
Now add 6 cups of water to the rice and add required amount of salt and rose water to the rice. Let it boil for 5 to 7 minutes, after that close the pan with a lid and let the rice boil for 5 more minutes again. Open the lid and see whether the rice had become sticky in the water, if it is not, let it boil for a few more minutes. When the rice is sticky, switch off the stove and close the pan with a lid and keep something heavy above the lid so as to make it airtight. Let it sit for 20 - 30 minutes. After that open the lid and add coriander leaves and feel the aroma of tasty and easy Malabar ghee rice/ neychoru.

PS : Amount of water is very important while cooking ghee rice or biryani so make sure you are adding only required amount of water into the rice. Don't disturb the rice by mixing it unnecessarily with spoon or spatula, this will lead to the breaking of rice and spoils its texture.
